Elizabeth (Liz) Sims received her undergraduate degree in nutrition (dietetics) from Arizona State University and graduate degree in Clinical Nutrition from Rush University in Chicago.
She has been an adjunct faculty member at Scottsdale Community College (SCC) for just over a year now — teaching several nutrition courses, both in person and online, within the department of Health, Physical Education, Recreation, and Dance.
Aside from her position at SCC, she works full time as a registered dietitian at the Mayo Clinic Hospital in Phoenix.
She is passionate about helping in the development and delivery of nutrition education and is fortunate to be able to work in both an academic and clinical setting to achieve these goals.
As the AFA College Representative for SCC, she is excited to have the opportunity to become more involved in campus activities and to help other adjunct faculty achieve the same sense of belonging.
